Named after its fetid aroma, Asafoetida is made from the white resinous sap of a variety of giant Fennel. Cooked, it has a beautiful onion-like flavour. Small amounts will give a dish gently lifting qualities where onion or garlic may be a bit too full on or course.
Highly prized for its digestive properties, Asafoetida is commonly used in a variety of vegetarian dishes and stews.
