Thai Sweet Chilli Lemongrass Salmon

Ingredients

  • 4-5 tbsp Lord & Lion Sweet Chilli Lemongrass Sauce
  • 2 large pieces of salmon or other preferred fish
  • 2 bunches of broccolini, washed
  • 2 potatoes, washed, peeled and sliced finely
  • Smoked paprika (optional)
  • 1 tbsp olive oil

 

Method

  1. Lay the sliced potatoes on a sheet of baking paper in the oven, drizzle with olive oil and salt, and bake for 15-20 mins at 170 degrees. Sprinkle some smoked paprika on them and turn over for another 15 minutes.
  2. Drizzle 1½ tablespoons of Lord & Lion Sweet Chilli Lemongrass Sauce on the fish, wrap the fish in baking paper to seal in the flavours and place in the oven next to the potatoes for 10 minutes.
  3. Drizzle 1-2 tbsp of Lord & Lion Sweet Chilli Lemongrass Sauce on the broccolini and place in the oven with the fish and potatoes.
  4. Plate up and serve with some wedges of lemon. Enjoy!
