Leigh's Lamb Curry
This gorgeous lady has been a fan of the Lord & Lion Spice range since her husband gifted her a Spice Box for her birthday a couple of years ago. She has generously shared her lamb curry recipe using our spices and it is an absolute stand out – one for you to try tonight!
Ingredients
- 2 bay leaves
- 4 whole cloves
- 2 yellow onions chopped
- 1 kg boneless lamb cut into pieces
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced
- 7 cardamom
- 1 heaped tsp Ceylon Cinnamon
- ½ tsp turmeric
- 2 tsp coriander
- 2 tsp garam masala
- ¼ cup vegetable oil
- 2 cups water
- ½ cup tomato puree
- ½ cup Greek yoghurt
- ½ tsp salt
- Coriander, chopped, to garnish
Method
- Add the oil on medium heat to a large pot with the bay leaves, cloves, peppercorns and onions. Cook, stirring, for 8-10 mins.
- Add in the lamb, ginger, garlic, cardamom, Ceylon Cinnamon, salt, turmeric, coriander and garam masala. Cook, stirring, for an additional 8-10 mins.
- Add in the water and tomato puree and simmer on low heat for approximately 1 hour. You can also slow cook this, time permitting.
- Take off the heat and add the Greek yoghurt, garnish with chopped coriander just before serving.
- Serve with rice, roti and yoghurt.
