
Spicy Prawn Noodle Soup
Here is an easy meal idea which your whole family will love!

Serves 4
Ingredients
- 500g of prawns, cleaned and deveined
- Rice noodles or any thin noodles
- Green onions (thinly sliced)
- Fresh herbs (like coriander or Thai basil, optional)
- 250g of vegetable stock/broth
- ½ tsp Lord & Lion chilli powder
- ½ tsp Lord & Lion cumin powder
- 1 tsp Lord & Lion paprika
- Salt to taste
- Rice noodles or any thin noodles
Method
- Prepare the broth: In a pot, pour the broth, add the spices and bring to a boil.
- Cook the noodles: Add the noodles to the boiling broth and cook according to package instructions until tender.
- Cook the prawns: In the last few minutes of cooking, add the prawns to the broth. Cook until the prawns turn pink and are cooked through – 3 to 5 minutes.
- Finish and serve: Salt to taste and adjust seasoning if needed, adding more chili powder for heat. Ladle the soup into bowls. Garnish with sliced green onions and fresh herbs.
