Spicy Prawn Noodle Soup

Here is an easy meal idea which your whole family will love!

Serves 4

 

Ingredients

  • 500g of prawns, cleaned and deveined
  • Rice noodles or any thin noodles
  • Green onions (thinly sliced)
  • Fresh herbs (like coriander or Thai basil, optional)
  • 250g of vegetable stock/broth
  • ½ tsp Lord & Lion chilli powder
  • ½ tsp Lord & Lion cumin powder
  • 1 tsp Lord & Lion paprika
  • Salt to taste
  • Rice noodles or any thin noodles

 

Method

  1. Prepare the broth:  In a pot, pour the broth, add the spices and bring to a boil.
  2. Cook the noodles:  Add the noodles to the boiling broth and cook according to package instructions until tender.
  3. Cook the prawns:  In the last few minutes of cooking, add the prawns to the broth. Cook until the prawns turn pink and are cooked through – 3 to 5 minutes.
  4. Finish and serve:   Salt to taste and adjust seasoning if needed, adding more chili powder for heat. Ladle the soup into bowls. Garnish with sliced green onions and fresh herbs.
