Spiced Baked Pumpkin

Say goodbye to your everyday baked pumpkin and give this a try – you’ll never go back!

 

Serves: 4 as a side dish.

Prep. Time: 5 – 10 minutes

Cook Time: 40 minutes

 

Ingredients:

  • Half a Kent pumpkin (cut into wedges or cubes)
  • 1-2 tbsp olive oil
  • 1 tsp Lord & Lion chili powder
  • 1/2 tsp Lord & Lion cumin powder
  • 1/4 tsp Lord & Lion turmeric powder
  • 1/4 tsp Lord & Lion paprika powder
  • 1/4 tsp Lord & Lion Ceylon cinnamon powder
  • Salt to taste
  • Optional: chilli flakes for extra heat and fresh herbs for garnish .

 

Method:

 

  1. Preheat your oven to 200°C (390°F).
  2. Prepare the pumpkin: Peel, seed, and cut the pumpkin into wedges or cubes.
  3. Make the spice mix: In a small bowl, combine chili powder, cumin, turmeric, paprika, cinnamon, and salt. Mix well.
  4. Toss the pumpkin: In a large bowl, toss the pumpkin pieces with olive oil. Sprinkle the spice mixture over the pumpkin and toss again until evenly coated. For extra heat, sprinkle some chili flakes on top.
  5. Bake: Arrange the coated pumpkin pieces on a baking sheet lined with parchment paper. Roast in the oven for about 30-40 minutes, turning once halfway through, until the pumpkin is tender and slightly caramelised.
  6. Serve: Serve warm with your preferred proteins and salads.

 

Tips:

  • Feel free to adjust the chili powder/flake to your preferred spice level.
