
Sausage Curry
A family favourite all year round – packed full of flavour and so quick to prepare!
Serves: 4 as a main dish with rice.
Prep. Time: 5 – 10 minutes
Cook Time: 10 minutes
Ingredients:
- 4 large organic sausages – sliced on an angle.
- 1 tsp Lord & Lion curry powder
- ½ tsp Lord & Lion paprika
- ¼ tsp Lord & Lion chilli flakes
- 200g button mushrooms (sliced)
- 1 red onion (finely sliced or chopped)
- 4 cloves garlic, minced
- 1-inch piece ginger (grated)
- 1 can coconut milk (400mL)
- 1 tomato roughly chopped
- 2 tbsp extra virgin olive oil
- Salt to taste
- 1 bunch of coriander leaves, chopped, for garnish
- 1 small red chilli sliced finely, for garnish (optional)
Method:
- Sautee the Onions and Mushrooms. Add the olive oil to a hot pan, add the ginger, garlic onions and mushrooms and fry for 2-3 minutes until the onions are translucent.
- Add the spices and the salt. Coat the onions and mushrooms in the spice mixture.
- Add the sausages and the tomato. Coat the sausages and the tomato in the spices and mix well. Cook for 2-3 minutes.
- Add the coconut milk. Bring to the simmer for just a few seconds and reduce the heat for another minute, mixing well.
- Serve over some rice and garnish with some coriander and chopped chillies or chilli flakes.
