Sausage Curry

A family favourite all year round – packed full of flavour and so quick to prepare!

 

Serves: 4 as a main dish with rice.

Prep. Time: 5 – 10 minutes

Cook Time: 10 minutes

 

Ingredients:

  • 4 large organic sausages – sliced on an angle.
  • 1 tsp Lord & Lion curry powder
  • ½ tsp Lord & Lion paprika
  • ¼ tsp Lord & Lion chilli flakes
  • 200g button mushrooms (sliced)
  • 1 red onion (finely sliced or chopped)
  • 4 cloves garlic, minced
  • 1-inch piece ginger (grated)
  • 1 can coconut milk (400mL)
  • 1 tomato roughly chopped
  • 2 tbsp extra virgin olive oil
  • Salt to taste
  • 1 bunch of coriander leaves, chopped, for garnish
  • 1 small red chilli sliced finely, for garnish (optional)

 

Method:

  1. Sautee the Onions and Mushrooms. Add the olive oil to a hot pan, add the ginger, garlic onions and mushrooms and fry for 2-3 minutes until the onions are translucent.
  2. Add the spices and the salt. Coat the onions and mushrooms in the spice mixture.
  3. Add the sausages and the tomato. Coat the sausages and the tomato in the spices and mix well. Cook for 2-3 minutes.
  4. Add the coconut milk. Bring to the simmer for just a few seconds and reduce the heat for another minute, mixing well.
  5. Serve over some rice and garnish with some coriander and chopped chillies or chilli flakes.
