
One-Pot Spiced Chicken Rice
The perfect dish for when you have little time to get dinner on the table.
Serves: 4 as a main dish.

Cook Time: 30 minutes
Ingredients:
- 600-800g chicken (cut into pieces)
- 1 cup basmati rice
- 1 red onion (finely chopped)
- 3 cloves garlic (minced)
- 1-inch piece ginger (grated)
- 2 tbsp olive oil
- 1 tsp Lord & Lion chilli powder
- 1 tsp cumin powder
- ½ tsp Lord & Lion turmeric powder
- 1 tsp Lord & Lion coriander powder
- 1 tsp Lord & Lion cumin powder
- 1 tsp Lord & Lion paprika powder
- 1 tsp Lord & Lion chilli flakes (adjust to taste)
- Salt to taste
- 2 cups water or chicken broth
- A large bunch of coriander leaves, chopped, for garnish
- Greek yoghurt (for serving)
Method:
- Prepare the Chicken: Season the chicken pieces with a pinch of salt and a little turmeric.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large pot or deep skillet over medium heat. Add the chicken and cook until browned on all sides, about 5–7 minutes. Remove and set aside.
- Sauté Aromatics: In the same pot, add the remaining olive oil. Add chopped onion and cook until translucent, about 3–4 minutes. Stir in garlic and ginger, cook for another minute until fragrant.
- Add Spices: Mix in all the spices and add a pinch of salt. Cook the spices for about 1 minute to release their aroma.
- Add Rice: Add the washed rice to the pot and stir well to coat each grain with the spice mixture.
- Simmer: Return the browned chicken to the pot. Pour in 2 cups of water or chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer gently for about 15–20 minutes, or until rice is cooked and chicken is tender.
- Finish & Serve: Garnish with chopped coriander leaves. Serve hot with a dollop of Greek yoghurt on top or on the side.
Tips:
- The coriander powder will give a warm, citrusy flavor that complements the other spices.
- Adjust the chili flakes to suit your heat preference.
- Feel free to add chopped vegetables like peas, carrots, or bell peppers for extra colour and nutrition.
