- 1/4 cup (50g) granulated sugar
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, cold and cubed
- 2-3 tablespoons ice water
For the apple filling:
- 5-6 medium apples (such as Granny Smith, Honey Crisp, or Fuji)
- 1/4 cup (50g) granulated sugar
- 1.5 teaspoon ground Lord & Lion Ceylon Cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour (to thicken)
For the crumble topping:
- 1/2 cup (65g) all-purpose flour
- 1/4 cup (50g) packed light brown sugar
- 1/4 cup (60g) unsalted butter, cold and cubed
- 1/2 teaspoon ground Lord & Lion Ceylon Cinnamon
Method
1. Prepare the crust:
In a mixing bowl, whisk together flour, sugar, and salt.
Add the cold, cubed butter. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the filling:
Peel, core, and slice the apples.
In a large bowl, toss the apples with lemon juice, sugar, Ceylon Cinnamon and flour. Set aside.
3. Make the crumble topping:
In a small bowl, combine flour, brown sugar and Ceylon Cinnamon.
Add the cold butter cubes and mix with your fingers or a fork until the mixture resembles coarse crumbs.
4. Assemble the pie:
Preheat your oven to 190°C.
Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish.
Transfer the crust to the pie dish, trim the edges.
Pour the apple filling into the crust.
Sprinkle the crumble topping evenly over the apples.
5. Bake:
Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and the filling is bubbling.
Let it cool slightly before serving.
